Fish meets bacon

Fish meets bacon

I love fish and I love fishing for it.
This is one very simple recipe for light dinner or a strong lunch.

What You need:

Any white fish filet
Bacon (How many? Bacon pieces = fish pieces)
Rosemary
Salt
Pepper
Olive oil

Sauce:
Mayonnaise
Lemon juice
Olive oil

What I do first is wash the fish a bit and then salt it. Not too much. You don't want it salty, just a little for the salt to push out the water from the fish. Then while the fish is sitting I prepare salad. Any salad that You like. Here You'll see simple salad that i make very often: salad leaves (I really like french ones called Frisee or Rucola, tomato, corn and dressing. Then the fish has been sitting long enough. Pour out the water and then I dry the fish with paper towel just to get it really dry. After that take some pepper and rosemary and put on the fish. The fish is ready. 

Then take a piece of bacon and wrap around the fish. Spread it a little, don't roll it in one place because then not the whole piece will have this great bacon taste. And You're ready to cook. Heat the pan with some olive oil and cook until the outside of the fish starts to become  little brown. But always make sure that it is well cooked. If You don't want it to even more crispy You can cook it in an oven. Or if You have prepared the fish first before the salad, keep it in the oven to keep it warm and crispy. 

Then serve with the mayonnaise sauce. Mix two spoons of mayonnaise, one tea spoon of lemon juice and one tea spoon of olive oil. I also like to put some pepper and some Dijon mustard to spice it up :) With salad on the side it's a perfect fast and easy meal.
